Tonkotsu Ramen Rinko

Tonkotsu Ramen Rinko (麺屋 林虎) is a small, specialist ramen bar serving rich, long-simmered tonkotsu — the cloudy, collagen-heavy pork-bone broth that is the whole point of the visit. This is the Pattaya outpost of a name that made its reputation in nearby Si Racha, and it follows the same Bangkok-style, Jiro-influenced template: you fill in a little order sheet to set your noodle thickness, fat level, garlic and portion size, then a bowl arrives with tender chashu (pork shoulder or belly), a soy-marinated soft egg and, if you want it, an almost indulgent amount of back-fat. There are only around ten tables tucked into a unit in the Exsire Pattaya mall just off Pattaya Third Road, a few minutes from Soi Buakhao, so it fills up fast and there is often a short wait at peak times. Bowls land in the low-to-mid few-hundred-baht range — more than a Thai noodle stall, in line with proper Japanese ramen elsewhere in town. It is a place for people who care about ramen specifically rather than a broad Japanese menu; the focus is narrow and the execution, by most accounts, is genuinely good.
