Edge is the Hilton Pattaya’s big, all-day restaurant, and its reputation rests on two things: an extravagant international buffet and a 14th-floor view that few restaurants in town can match. It’s a special-occasion place — somewhere to come hungry, dress a little, and make an evening of it rather than grab a quick meal.

The setting

Edge sits on Level 14 of the Hilton, the tower that rises directly above Central Festival mall on Beach Road. That location gives it a genuinely panoramic outlook over Pattaya Bay — you can choose between the cool, buzzy air-conditioned interior beside the open kitchen or a table out on the terrace overlooking the water. At sunset and after dark, with the bay lights below, it’s one of the more memorable dining rooms in central Pattaya. If you want the same view purely for drinks, the Hilton’s Horizon rooftop upstairs is the sister venue.

The buffet

The heart of Edge is the buffet, and it’s a substantial one — a broad international spread with live cooking stations, a big salad and cold section, hot Thai and Western dishes, and a dessert counter. The setup changes by day, which keeps it interesting for repeat visitors and hotel guests:

• Monday–Thursday: the standard international dinner buffet, around ฿960 per person as a 2026 guide.
• Friday: the Seafood Extravaganza — an expanded seafood spread (prawns, crab, oysters, mussels, clams, fish) on top of the international buffet, around ฿1,300.
• Saturday: the weekend BBQ, also around ฿1,300.

There are themed lunch buffets through the week too, plus à la carte options if you’d rather not do the full spread. Prices typically exclude drinks, which is where a buffet bill can climb — factor that in.

The honest caveats

This is a hotel buffet at hotel prices. The food quality is high and the seafood nights are genuinely generous, but you’re paying a premium for the Hilton setting and the view, so it’s a splurge rather than a value meal. It’s also popular and lively — book ahead for dinner, weekends and the seafood/BBQ nights if you want a window or terrace table, and expect a busy room rather than an intimate one. Service is polished, as you’d expect from the Hilton, but can stretch when every station is mobbed at peak time.

Come to Edge for a celebration, a seafood blow-out or a view-with-dinner occasion — anniversaries, family gatherings, or simply a treat night out. Buffets suit families and mixed groups well, and the variety handles fussy eaters and big appetites alike.

Skip it if you want a quiet, intimate dinner or a budget meal — central Pattaya has plenty of cheaper and more romantic options, and a mall food court downstairs if you just want to eat.

Edge is inside the Hilton above Central Festival, so it’s easy to reach on foot from anywhere central, with baht buses and Grab dropping you right at the mall. Take the hotel lifts to Level 14. Find it on the map.
